I've been saving this newspaper article for an appropriate time, and this might be it:

The commercial developments along these lines are (it seems to me) driven by anticipation of sales to enough customers to justify the investment.

Those humans who will be spending time away from Earth are likely to benefit from the competition to provide flavorful, nutritious and visually appealing foods based on plants.

I'm also quite interested in the vat grown meat experiments, which (apparently) are able to produce food with the flavor, texture and nutrient content of meat.

The small plants for mars is for concentration as the hieght of a mars building may not be adequate for large crops but multiple shelves of short growing types would fix the issue of growth density.

Yes. That's a definite advantage of a dwarf wheat crop for indoor, artificially lit, agriculture on Mars.  You could have 3 to 5 layers of crops in a 10 foot high hab.

This is now making headline news as the  Impossible Burger showing up in grocery stores

Burger King has been in the news for a while now and now McDonald’s gets into the veggie burger game, testing a Beyond Meat patty in Canada

I knew the topic existed...
Eating for mars is more to do with the contents grown in the greenhouse and the key is the recipies that we will need to make sure we are growing the right things for the meals on mars at the correct time.
