Let's say for example oxygen creating plants and trees took hold in the Martian/Earthen soil/compost farms and starting producing oxygen along with the natural gases given off by the decaying microbes and foilage, what type of interaction would possibly occure? Would the sudden release of oxygen and other gases create storm cells ? What other reactions may take place?

An atmosphere with a significant concentration of oxygen, when exposed to UV light will spontaneously create ozone. That ozone will also break down when exposed to UV light. On Mars it will reach equilibrium when surface UV light equals that on Earth. That's as long as you don't add something that will destroy ozone. So when you deliberately create greenhouse gasses on Mars to warm the planet, don't release CFCs.

Mars would be a great spot for a coffee plantation. At harvest time, you can open up the greenhouse dome and have your beans roasted by the radiation, freeze-dried by the cold and pulverised by the sand-storms, all inside of about five minutes.
